Kinoene "Umakara Migaki Hachiwari" Junmai [720ml] red Polishing Ratio: 80% (Migaki 8-wari)The Story In a sake world that often chases higher and higher polishing ratios, Kinoene decides to go the other direction with this bottle. "Hachiwari" means 80%, referring to the amount of rice grain left remaining after polishing. By intentionally not polishing away much of the outer layers of the rice grain, the brewery preserves the proteins and fats that create deep, rich umami and a wilder, stronger personality. This is "Umakara" style, a
