A slight richness from the rice and a touch of banana culminate in a crisp, clean finish. Whereas most sake are pasteurized twice, this junmai is pasteurized only once, resulting in a vibrant character with a lingering acidity. This brew is made from Yume no Kaori rice, which was developed specifically for growing in Fukushima prefecture.
