Beef osso buco is different by design. It is a cross cut beef shank with the bone left in, marrow in the center, collagen through the meat, and enough structure to build a braise that actually tastes like something. Ours is raised on open Alabama pasture, grass fed, non GMO grain finished, dry aged up to 28 days, and cut thick so the marrow and collagen have
