This was co-fermented in old Irish Whiskey casks with the juice of bittersweet cider apples featuring Michelin heavily ably assisted by Dabinett

then bottled by gravity without fining nor filtration

Tilquin Oude Gueuze Tilquin Cuvée Marie-Catherine 7% (750ml) 440ml Pair with: DuckCuvee Jean Paul was blended in honour of Marie Catherine Tilquin Rousseaux, mother of Pierre, with 40% one year old lambics, 30% two year old lambics and 30% three year old lambics, all matured in oak barrels. Unfiltered and unpasteurised, this beer was refermented and matured in the bottle for one year. Part of the Tilquin Family Tree Project: a different blend for each member of the Tilquin family tree.
