The winemakers note: Pinot Gris and Gewürztraminer were picked and co-fermented together for six days before being pressed and aged in stainless steel

Manually harvested grapes undergo a carbonic maceration on the skins for 15 days in whole bunches

Kingston Black has s natural balance of fruit, tannin, acid and sugars, making it one of the few apples that can truly succeed as a single variety cider. To keep its purity, Little Pomona kept the cider out of barrels throughout the making process and, to give a fine sparkle, it was bottle conditioned prior to release. Sweet
